Our meat atelier is located near the town of Pushkino, and a one-way trip from my house takes two hours at best. The beginning of the week was spent entirely in the mode of filming, working through, meetings, events and plans with the team. In general, everything that usually remains behind the scenes of my restaurant rhythm.
