Our meat atelier is near Pushkino. Getting there from my home takes two hours each way, on a good day. The start of the week was all shoots, recipe development, meetings, events and plans with the team. Everything that usually stays behind the scenes of my restaurant life.
So much going on, so many vivid moments — and words don’t always do them justice. Especially now, with the warm sunshine and this country setting that keeps making me smile.
