In September that year, I had a wonderful trip to Seoul with the Coffeemania team. I’ve written about it and shared photo stories from South Korea. There were plenty of memorable moments, but one food discovery stayed with me: the beef rib at Born and Bred, under the direction of Kyunghwan Min.
I couldn’t get that flavour out of my head. It was a real revelation: a new idea, a new approach, a new feeling. With permission to use the technique, I created my own interpretation. And from today, it’s on the menu at Zhazhda Krovi. A bold hot starter that may change the way you think about a familiar cut.
