We select the cut weight, marbling and aging period for each order. A 4 cm-thick porterhouse, or an even thicker filet mignon, is hard to find in an ordinary shop. Here, it’s normal.
Every order has its own character. Sergey, Alexey, Farid and Valentin prepare it for you — people who know meat by feel, not just from pictures. On Mondays, Grant and I are at the cutting table too.
