I met Alexander many years ago, at the time of the opening of the Steak at Home butcher shop. Our first master class was held at the culinary studio in 2013. Inspired by Kirill Martynenko’s video, Sergey Morokov (founder) and I called in experienced fellow enthusiasts, chefs, and meat romantics to help, and together with the guests we cooked some of our first steaks. It was a curious time, a time of discovery.
Now, 12 years later, barbecue culture has become much more widespread, and the phrase “I cooked a steak” sounds like “I brewed coffee.” The whole question is, what kind of steak is it?)
